The recommended 2%–3% xanthan gum ratio is based specifically on the xanthan gum used by Fresh Jagua.

Like any natural ingredient, xanthan gum can vary significantly between manufacturers in strength, hydration rate, and viscosity. This means that when using a different brand, you may need to slightly adjust the amount to achieve the desired gel consistency.
